Store bought caramel corn is notoriously full of nasty ingredients such as high fructose corn syrup, sugar, sodium benzoate, favours and preservatives to name a few.
Here I have created a homemade 'caramel' corn and amped it up with with a few nutrient dense ingredients.
This is not a crunchy caramel corn but it is none the less delicious. It's not an everyday snack as it does contain some maple as a sweetener but it is definitely great for a kids party, a movie treat or halloween.
6 generous cups of organic GM free popcorn (you can pop your own or use an preservative additive free popped corn such as the Cobs brand)
INGREDIENTS:
- 1 cup of sunflower seeds
- 1/2 cup of sesame seeds
- 1 cup of pecans
- 1 cup of coconut chips (optional but so good!)
- 1/3 cup of Tahini
- 1/3 cup of 100% pure maple syrup (steer clear of the sugar laden maple alternatives)
- 1/3 cup of coconut oil
PROCEDURE:
- Combine popcorn, seeds, nuts and coconut chips in a bowl.
Add coconut oil, tahini and maple in a pot and just heat until the coconut oil is slightly melted (only a minute or so). Remove and mix until a smooth caramel sauce forms. - Pour the caramel over the popcorn and mix thoroughly (I find using my hands the easiest way)
- Place Caramel Corn in the fridge for about an hour for the caramel to firm.
- Enjoy straight from the bowl or serve individually
- Store Caramel Corn in the fridge.
