I love this colourful salad with it’s many shades of red. It is an excellent antioxidant salad, helping the body to fight free radicals. Both red cabbage and gojis are a rich source of vitamin C, A and E – making them powerful antioxidant foods. Pomegranates are also an excellent antioxidant food, this largely due to the punicalagins they contain (plus they also contain vitamin C). Punicalagins are responsible for pomegranate’s antioxidant abilities; these compounds are particularly good for the heart and blood vessel health.
INGREDIENTS:
- ½ a small red cabbage
- 2 small apples
- 1 fennel blub
- 1 large handful of chopped mint
- ½ pomegranate
- ½ cup of goji berries or cranberries or pomegranate
Dressing:
- 1/3 cup red wine vinegar
- 1/3 cup olive oil
- 2 teaspoons dijon mustard
- 2 teaspoons Honey
- 1/2 teaspoons of salt
PROCEDURE:
- In a bowl add finely sliced red cabbage, grated apple, diced fennel and finely chopped mint.
- Add the pomegranate seeds and goji berries (or cranberries).
- Combine dressing ingredients in a jar and shake well.
- Dress and serve.
