Easter Cacao Nest with Bliss Ball Eggs

Hello there,

Gosh, it has been one busy week my end! I celebrated my 40th birthday on Wednesday, which was quite the milestone. I had a wonderful celebration with friends and family last weekend and enjoyed the festivities all week (lucky me!). I’m thinking about doing a blog post on turning 40 as I’ve had some really beautiful experiences recently and also some profound “aha” moments that I’d love to share.

I feel I should apologise for another Easter post, as I do appreciate that not everyone celebrates Easter, but I figured this little chocolate nest could be made at any time of the year. It’s a great activity to do with kids – especially for nature lovers. I’ve been trying to think up a healthier alternative to chocolate this Easter, and one that is not too laden with sugar. This recipe’s ticked the box! I had so much fun making it with my 3.5-year-old, who loves sitting on the bench cooking, getting her hands messy while chatting with me.

 This recipe is one I adapted from a kid’s arts and crafts book and I’ve healthier it up a bit. It has shredded wheat in it, which I remember eating many years ago and wondered if it was still around. I’m always quite skeptical about shopping in the cereal aisle because it really is the isle of hidden sugars. However, I was pleased to see shredded wheat contained only 100% wheat – hurrah (not so great if you’re gluten-free).

The bliss ball eggs are an old recipe of mine (coconut, lime and Goji bliss balls) that I have posted before, however, I’ve changed the recipe to make them the quickest, easiest bliss balls to make. You don’t even need a food processor for these ones – all ingredients go in a bowl, you mix, roll and they are ready to go in the fridge.
