I love a good cup of chai, with this in mind I felt inspired to create some Chai Spiced Raw Bars. These tasty morsels use some of the key chai spices, as well as fruit, nuts and other nutrient-dense ingredients. The bars are also raw so maintain their essential nutrients and enzymes.
Gluten-Free, Dairy-Free, Refined Sugar-Free, Raw
INGREDIENTS:
- 1 cup almonds (raw)
- ½ cup of sesame seeds
- 1 cup raw sunflower seeds
- 2 teaspoons ground cinnamon
- 1 thumb of finely grated fresh ginger
- 2 teaspoon ground ginger
- 1 teaspoon ground cardamom
- ½ teaspoon of salt
- ½ cup of coconut oil (soft or gently melted)
- 2 tablespoons of honey (heaped)
- 2 tablespoons of nut butter (optional)
- ½ cup of dates (soaked in hot water to soften and then drained)
- ½ cup raisins
- ½ cup of goji berries
- ¼ cup of ground flaxseed
Chocolate Topping (optional)
- 1 tablespoon of cacao butter
- 2 tablespoons of coconut oil
- 3 tablespoons of raw cacao
- 2 tablespoons of maple syrup (or sweetener of your choice)
PROCEDURE:
- Line a slice tray with baking paper – set aside.
- In a food processor add: almonds, sesame seeds, sunflower seeds and coconut, blend until the seeds and nuts are finely chopped.
- Add all the remaining ingredients and blend until the mixture forms a firm paste
- Press the mixture firmly into the greased slice tray. You can use another piece of baking paper on the top to ensure the mixture is pressed down evenly.
- Freeze until firm
Chocolate Topping (optional)
- Gently melt cacao butter and oil in a pot, add the remaining ingredients and stir well.
- Set aside for 10 minutes and then drizzle chocolate topping over the frozen bars.
- Leave the bars out of the freezer for around 10 minutes before slicing into bars (otherwise they are very difficult to cut)
- Store the clusters in an airtight container in the freezer.
